BLUE-BARB JAM
3 C Crushed Blueberries (4 cups mashed) 1 C finely chopped Rhubarb (enough to bring the fruit to a total of 4 cups) 2 tbsp lemon juice 1 pkg pectin crystals 4 C sugar Place fruit, lemon juice and pectin in a large pot and bring to a boil. Add sugar, bring back to a rolling boil (one that can't be stirred down) and boil for 1 minute, stirring constantly. Remove from heat, stir and skim off foam, for 7 minutes to prevent floating fruit. Jar and water process for 5 minutes. Makes 6 250ml jars. |

But I may half the recipe.  Not a good idea because of the pectin. It may not set. Do the full recipe and give some jars away as Christmas gifts. |
